Gratitude Sunday #11 Irish Heritage and Family


I'm joining Linda at A La Carte once again for Gratitude Sunday. This week I'm thankful for my Irish roots. This is a wonderful book that I own about the Irish in America. I admire my ancestors who left their country to come to America searching for a new life. I just cannot imagine leaving family and country journeying across the ocean to a strange land.


Chris, Ava and our daughter Angie invited us to dinner and asked for me to bring dessert. Chris doesn't like mint, so that was a challenge! When I was looking to find a recipe I really had to search for something new. Here's all my supplies gathered for some fun baking.


I made two cookie recipes. The one with sprinkles is a lime Jello recipe. It was soft and flavorful and refreshing. I think it would be great in the summer with lime sherbet. The other cookie is one of my favorites....almond stamp cookies. Chris likes them along with my sister and my other daughter Gina.


These are my Blarney Stones-little cupcakes, completely frosted and rolled in coconut or pecans. I prefer the coconut ones. We usually make these in pastel colors for Easter. This is a dessert passed down from my grandmother on my mom's side and they have become a family tradition.


This was Angie's center piece and some of her little decorations. You can see her table setting in the next photo.


Offering a toast to the family and the fun on Saint Patrick's Day. Some of us had 7 Up floasts while other had a bit of Irish beer.


 This was my favorite yummy thing at dinner. It's called colcannon. Oh my gosh, it was delicious! I had many helpings. It's a creamy mashed potato dish with cooked cabbage. So Yummy!


We also had corned beef and soda bread. Chris is a wonderful cook. It's so nice to be invited to a special dinner and a blessing to see your daughter enjoy entertaining.


I love soda bed. It's such a simple bread but so yummy and enjoyable.

My dessert presentation. Jimmy and Ava were looking very carefully into his cupcake for he discovered that a tiny leprechaun was hiding in his inside. As you can see, they were being very careful. Love the smile on Jimmy's face!


I gave Chris this little couple for one of  his birthday presents. I was listing things for Etsy one day when Chris, Angie and Ava stopped by and Chris fell in love with them. They are so cute and i'm glad to pass them on.

So, I am so grateful for my Irish roots and my sweet family. We had a wonderful time...thanks for everything. Thank you God for giving me a delightful family.

Looks like you had a wonderful Irish dinner with your family! I love colcannon, too. Yummmmm. The little cupcakes rolled in coconut make me think of lamingtons, an Australian dessert.

You can just feel all the effort and love that went into your family St. Patrick's celebration! I think your ancestors were smiling down on you all and being thankful that they took a leap of faith and came to a new land.
